Hi! I’m Bernadette, and I blog about my life as a wife, mother, teacher, Christ-follower, cook and projector at my blog, Barefoot Hippie Girl. I truly enjoy cooking. It is a way for me to unwind and show love. (Is food one of the 5 Love Languages?) I have a couple of cooking rules.
- Lots of “bang for buck.” Meaning that I like a recipe that is ascetically pleasing-colorful and beautiful-but that didn’t take hours for me to get it looking good. Which leads to…
- Quick and easy. Probably 90% of my recipes take less than an hour of hands on time. Probably 75% of them take less than 30 minutes. I just don’t see the point in spending way more time cooking something than time it will take to consume it. If it has over 10 steps, rest assured, I will probably never make it.
- Try a new recipe every grocery shopping cycle. This brings variety, keeps us on our adventurous and bare toes, and allows room for the old stand-bys too.
The Barefoot Hippie family likes various and sundry ethnic cuisines. Our favorites are Italian (that’s a given), Mexican, and Mediterranean. We also like Chinese-but I don’t cook it. I just don’t.
Barefoot Hippie Girl Hummus
2 15 ounce cans garbanzo beans (reserve liquid from one can)
1/2 cup olive oil
1/2 cup tahini paste
1/4 cup lemon juice
3 garlic clove, minced
1t cumin
2t salt
In a blender or food processor, combine all, and half the reserved liquid. Blend until smooth, adding more liquid as necessary for the thick dip consistency.
